สถานการณ์การแพร่ระบาดของเชื้อไวรัสโคโรนาที่ยังคงดำเนินต่อไปเป็นตัวเร่งสำคัญที่ทำให้อุตสาหกรรมอาหารเกิดการปรับตัวเพื่อให้สอดคล้องกับการดำเนินชีวิตและการทำธุรกิจในยุคความปกติถัดไป (The Next Normal) เพื่อลดความเสี่ยง และเพิ่มประสิทธิภาพในการปฏิบัติงาน จึงได้มีการนำเทคโนโลยีขั้นสูงมาใช้ในการปรับธุรกิจเข้าสู่ระบบดิจิทัลและเชื่อมโยงกระบวนการผลิตในระดับอุตสาหกรรมมากขึ้น เพื่อให้สามารถบรรลุเป้าหมายในการเพิ่มความคล่องตัวและความยืดหยุ่นในการปฏิบัติงาน รวมถึงการจัดการด้านข้อมูล นอกจากนั้นยังช่วยให้ผู้ผลิตสามารถเห็นภาพการทำงานทั้งระบบ และพร้อมรับมือกับความต้องการของตลาดในอนาคตได้อีกด้วย

การใช้ระบบดิจิทัลเพื่อการผลิตด้วยเทคโนโลยีแห่งอนาคต

1.      Artificial Intelligence and Robotics

เทคโนโลยี AI หรือปัญญาประดิษฐ์ ถูกนำมาใช้อย่างแพร่หลายในโรบอตสำหรับโรงงานอุตสาหกรรมเพื่อทำให้เครื่องจักรสามารถทำงาน และตัดสินใจได้เทียบเท่ากับมนุษย์อย่างเหมาะสม

Industrial Internet of Things เป็นเทคโนโลยีที่สามารถติดตามการทำงานของเครื่องจักร และอุปกรณ์ต่างๆ ได้แบบเรียลไทม์ โดยอาศัยเซ็นเซอร์ และเชื่อมโยงเข้ากับระบบคอมพิวเตอร์ผ่านเครือข่ายอินเทอร์เน็ตภายในโรงงาน ทำให้สามารถตรวจสอบ และแก้ไขปัญหาได้ตรงจุดอย่างทันท่วงที

3.      บล็อกเชน

บล็อกเชนเป็นระบบจัดเก็บข้อมูลที่สามารถส่งต่อไปยังบุคคลอื่นที่อยู่ในระบบได้เสมือนห่วงโซ่ให้สามารถเข้าถึงได้ทันที ซึ่งใช้อย่างกว้างขวางในระบบการจัดการห่วงโซ่อุปทาน หรือการตรวจสอบย้อนกลับ

Blockchain is a storage data structure, forming a chain of data, that can be accessed in real-time by everyone in the system. In the food industry, blockchain is widely used in supply chain management and traceability.
